La quassine est un composé blanc cristallin au goût très amer découvert dans l'écorce du quassia. Elle est utilisée comme arôme alimentaire, comme insecticide naturel et dans la médecine traditionnelle. [...] Dans l'Union européenne, l'extrait de quassia est autorisé dans l'alimentation [comme] aromatisant. [...] : son utilisation est autorisée à 5 ppm en général, 10 ppm dans les bonbons (pour la toux) et 50 ppm pour les boissons alcoolisées.
